 Insane World Generation Mod for Minecraft 1.6.2 and 1.5.2
This mod is interesting, to say the least.  It lets you adjust every ounce of the world generation to your liking.  It has a fairly large config file that allows you to change everything from sea level to ore frequency.
Granted, some of these are limited (you get four options for sea level), but for the most part it makes some pretty awesome worlds for general needs.
You can make some amazing maps for adventuring, or for building...
